We try really hard to eat right and follow a Paleo diet, but lets be honest, its hard! When your boyfriend eats anything from chocolate, pizza and pasta, oh creamy pasta, I love you. And he says things like “I can’t do cardio because then I’ll lose muscle” – firstly, ARE YOU KIDDING?! Secondly, which women do you know that has this ‘problem’, even your skinniest friend, for the fear of putting on a few when she gets older. Men hey.
Well we (Christi & I) like to do a Paleo detox every few months, and though we are failing miserably at the moment, because life is busy and overwhelming right now. So we eat the easy things. In an attempt to try and have some healthy snacks around the house so we don’t shove biscuits and chips into our mouths simultaneously, I made these lovely lemon truffles.
And boy have they gone down well. So if you’re a snacker like my sister then you’ll love these.
- Juice of three lemons (if you love lemon, if not, use one for a more subtle lemon flavour)
- 1 1/2 cups unsweetened desiccated coconut
- plus 1/2 cup for coating
- 4 tbsp honey
- 4 tbsp coconut oil
- 1 tsp vanilla extract
- pinch of salt
In a food processor combine all the ingredients for about a minute until the mixture forms a dough like consistency.
Use your hands to form small balls with the mixture. I made the balls quite small as I imagined that the lemon would be quite strong (I love lemon, so this was perfect).
In a separate bowl, coat the lemon balls with coconut, transfer to a plate and leave in the fridge to set for 15-20 minutes.
Makes approx 25 truffles.

I left them in the fridge for the snacker (Christi) and they kept well, for a good few days, I’d say at least 5 days.
This is such a quick and easy recipe. You could make it before you go to work or just before a dinner party.
